CHEF'S CORNER

Our Executive Chef, Pierre-Michel Le Bouedec, has been at the Albany Club Since 1999. He was born in Brittany, France. He has trained in many regions of France including the Basque Country and worked his way up in Paris and London, before heading to Canada to work at the famous Relais-Chateau Inn at Manitou near Parry Sound. He fell in love with Canada and decided to stay in this magnificent country.

Since moving to Toronto in 1992, Pierre has worked in some of the city's best restaurants including Auberge du Pommier, Zola and the Founder's Club in the Skydome.

"I am very lucky to be surrounded by some excellent international professional staff, notably Jaydeep Parhar (Chef de Cuisine), Ken Tan (who has worked in many countries and has been with the club for over 20 years) Johann Meister (our pastry chef from Austria), and many others. Our brigade is working hard everyday to provide you with fresh and innovative menus made from quality ingredients."

"Our philosophy is to balance classic & modern French cuisines. We also incorporate some Asian and Mediterranean influences, while offering traditional favorites of our members."

The menus are changed regularly and we maintain a constant variety in our extensive choice of daily specials.
